Before it was all the craze, my husband and I have been practicing the now popular Ketogenic diet, affectionately known as Keto. It has allowed for us to keep our weight and health in check while enjoying foods similar to what we already love. 

So what is all this keto business about anyway? The most simple way to define Keto is it's a very low carb/high fat diet. It works by drastically reducing one's carbohydrate intake while replacing it with fat, preferably good fats like avocados. After eating this way for an extended amount of time (about two weeks for beginners), your metabolic system be shifted from using carbohydrates as the first source of energy to fat and ketones. This metabolic state is known as ketosis. In this state your body burns fat at an accelerated rate while lowering blood sugar and insulin levels.

It's amazing watching years of stubborn pounds just melt away in just a matter of months. Combined with intermittent fasting, I was able to wear clothes from high school again! What made sticking to this diet a bit easier than other diets is that I would be able to make a "keto-friendly" version of many of the foods and flavors we already loved. That's what brings me to this recipe.

Who doesn't like pizza?! It's the hubby's most beloved comfort food and as Brooklyn, NY natives, we take our pizza SERIOUSLY. This is how we can enjoy pizza awesomeness guilt-FREE!

Cheesy Pepperoni Pizza Bowls

WHAT YOU WILL NEED
  • Medium Frying Pan
  • Metal Spatula
  • Spoon
  • Cutting Board
  • Chef Knife
  • Ceramic Ramekin Bowls
  • Oven or Air Fryer

INGREDIENTS

 8 oz of Ground Sausage

 ½ tsp of Ground Black Pepper

 1 cup of Tomato Sauce

 8 oz of Shredded Mozzarella

 2 tsp of Italian Seasoning

 8 Slices of Small Pepperoni

 ½ tsp of Kosher Salt (as needed)

 Garnish with Basil Leaf (optional)


PREPARATION 
1. In a medium skillet over medium heat, cook the sausage until cooked through, breaking up any clumps with the back of a wooden spoon, about 8 minutes. 
 
2. Transfer to a paper towel lined plate to drain. (if your sausage is in links, remove the casings before cooking).
 
3. Spread the sausage in a small casserole dish or heatproof bowl, or in two 8-ounce ramekins.
 
4. Spoon the marinara sauce over the sausage and layer on the cheese and toppings. Save a little cheese to sprinkle over the toppings so that they stay in place.
 
5. Broil in the oven or air fryer for about 2-3 minutes.
 
6. Garnish with basil. Serve hot.
